Corn flour (powdered) - ½ cup
Garlic paste - ½ tsp
Green chilli (sliced) - 2 tbsp
Vinegar - 1 tbsp
Sunflower oil - ½ cup
Egg (beaten) - 1
Ginger paste - ½ tsp
Onion (chopped) - 2 cup
Soy sauce - 1 tbsp
Spring onions (chopped) - 1 handful
Salt - ½ tsp

The process to make dry chilli chicken

  1. Take a bowl and add eggs, chicken, corn flour and ginger-garlic paste. Mix all the ingredients properly.
  2. Then add water into the bowls and make sure that the chicken pieces should be marinated well with the batter. Keep it aside in the refrigerator for 1 to 2 hours to marinate.
  3. Take a deep pan and heat the oil. Place chicken pieces in the oil and cook on medium flame until they turn golden brown in colour.
  4. Once done, remove chicken pieces from the pan and place on an absorbent paper.
  5. In a separate pan, add 1 - 2 tablespoon of oil and heat it over a moderate flame.
  6. Once the oil is hot enough, add onions and saute for 2 to 3 minutes until they turn golden brown.
  7. Then add green chillies and saute for a further few seconds (You can also use dry roasted green chillies to strengthen the taste or can use vinegar soaked green chillies to add on the flavour and taste).
  8. Then add vinegar, chicken, soy sauce and salt. Mix them well so that chicken is well covered with the sauces.
  9. Once done, switch off the flame and transfer chicken into the serving bowl.
  10. Garnish the dish using roasted sesame seed and spring onions.
  11. Your dry chilli chicken is ready. Serve it hot immediately.
