The process to make dry chilli chicken
- Take a bowl and add eggs, chicken, corn flour and ginger-garlic paste. Mix all the ingredients properly.
- Then add water into the bowls and make sure that the chicken pieces should be marinated well with the batter. Keep it aside in the refrigerator for 1 to 2 hours to marinate.
- Take a deep pan and heat the oil. Place chicken pieces in the oil and cook on medium flame until they turn golden brown in colour.
- Once done, remove chicken pieces from the pan and place on an absorbent paper.
- In a separate pan, add 1 - 2 tablespoon of oil and heat it over a moderate flame.
- Once the oil is hot enough, add onions and saute for 2 to 3 minutes until they turn golden brown.
- Then add green chillies and saute for a further few seconds (You can also use dry roasted green chillies to strengthen the taste or can use vinegar soaked green chillies to add on the flavour and taste).
- Then add vinegar, chicken, soy sauce and salt. Mix them well so that chicken is well covered with the sauces.
- Once done, switch off the flame and transfer chicken into the serving bowl.
- Garnish the dish using roasted sesame seed and spring onions.
