Queen of Indian sweets: Rice Kheer


One of the most popular Indian sweets, Kheer is also known as the Queen of Indian sweets. Made with rice, milk, nuts, and many other ingredients, the dish is like a treat on your taste buds and worth eating.

Ingredients:
  • 1/4 cup basmati rice
  • 1-liter full cream milk.
  • 6 tablespoons sugar
  • 1/2 teaspoon cardamom powder
  • 1 pinch saffron strands
  • 1 tablespoon chopped almonds
  • 1 tablespoon chopped cashews
  • 1 tablespoon chopped unsalted pistachios
  • 1 tablespoon golden raisins
  • Rose water or kewra water

Making of Rice Kheer:
  1. In a bowl, add rice along with enough water an rinse a couple of times. Drain all the water and add fresh water and soak rice for about 15-20 minutes.
  2. Meanwhile, take a big kadhai and add full cream milk to it. Keeping the flame low, heat the milk. Make sure that you stir at regular intervals so that milk doesn’t stick to the bottom of kadhai.
  3. Now, remove one tablespoon of milk from the kadhai in a small bowl. Add a few saffron strands in milk. Mix well and keep it aside.
  4. Now, let the milk come to a boil. Once the milk comes to a boil, drain all the water from rice and add that rice to the milk. Mix well and let the rice cook on a medium flame. Keep stirring at regular intervals.
  5. Once rice is half-cooked, add 5-6 tablespoons of suagr. Mix well and add more sugar if required. Keep simmering until rice is fully cooked. Once cooked add cardamom powder, chopped almonds, and pistachios. Mix well and then add saffron dissolved milk.
  6. Mix well and let the kheer cook on a low flame until thickened. Once the kheer is ready, turn off the gas and garnish with golden raisins and rose or kewra water.
  7. Yummy Kheer is ready to serve amongst all the family member or friends or guests. You can also add more dry fruits from the top while serving.
