Gujarat’s Special: Chana Dal Dhokla

Remember that Gujarati friend who used to bring that lip-smacking Dhoklas to college? Yes, Dhoklas are that amazing and so are Gujarati friends. Chana Dal Dhokla is a traditional Gujarati dish. There are many types of Dhoklas like Makai Dhokla, Nylon Khaman Dhokla, Chana Dal Dhokla, etc. Out of all, Chana Dal Dhokla is my favorite.

Ingredients:
For Batter:
  • 250 grams Chana Dal
  • 20 ml yogurt
  • Sugar

For Tempering:
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds (rai)
  • 2-3 red chilies
  • 1/4 teaspoon asafoetida (hing)
  • 1 tablespoon water
  • Few drops of lemon
  • Salt as per the taste
  • 1 chopped green chili
  • Finely chopped coriander leaves
  • 10 grams chopped ginger
  • 1/2 teaspoon haldi powder
  • Salt as per the taste
  • A pinch of sodium bicarbonate

Garnishing:
  • Grated coconut
  • Finely chopped coriander leaves

Making of Chana Dal Dhokla:
  1. Take some water in a bowl and thoroughly rinse the Chana Dal. Then soak it in enough water for at least hours. Now, take a blender and add soaked Chana Dal and yogurt in it. Blend into a smooth batter. Add a bit of sugar to it and mix well. Leave the batter in a warm place to ferment overnight.
  2. Take another small bowl, and add oil to it. Mix sodium bicarbonate with oil and leave it aside in a cool place. Now, grease a mold or any suitable vessel with oil. Take the batter, and add sodium bicarbonate mixture to it and mix well until light and fluffy. Then, immediately pour the batter into the greased plate.
  3. Place the plate in the steamer and let it steam for about 20 minutes. Once the Dhokla is ready, remove from the steamer. Take a knife and place it standing in the batter. If the knife stays still, then the Dhokla is ready.
  4. Now, remove from the steamer and cut into cubes. Then, take a pan and heat some oil in the pan. Add mustard seeds and allow them to splutter. Add the remaining ingredients for tempering. Pour it over the Dhoklas.
  5. At last garnish the dhoklas with grated coconut and finely chopped coriander leaves.

Yummy Chana Dhoklas are ready. Serve them with spicy green chutney and relish with everyone in the family.
