Delicious Shahi Paneer Samosa

Samosa, a snack that doesn't require any occasion. Irrespective of any occasion or function, Samosas can be enjoyed at any time of the day. So, this Diwali, make this yummy and mouth-watering Shahi Paneer Samosa and relish them with your family, friends, and everyone.
Ingredients:
For dough:
2 cups Maida (all-purpose flour)
¼ tsp carom seeds (ajwain)
½ tsp salt
¼ cup ghee
For stuffing:
2 boiled potatoes
¼ cup green peas
100 grams Paneer
10-12 Cashew nuts (kaju)
1 tbsp raisins (kishmish)
Finely chopped coriander leaves
¼ tsp cumin seeds (jeera)
½ tsp coriander powder
1 teaspoon ginger paste
1 finely cut and de-seeded green chilly
About ¼ tsp garam masala powder
About ¼ tsp mango powder
About ¼ tsp red chilly powder
Making of the samosas:
Take maida in a bowl. Add ghee, salt, ajwain, and water. Mix all the ingredients and knead into a dough. Add water as per the need.
Cover the dough and keep it aside for about half an hour.
Now, for making of Shahi Paneer for the stuffing, take paneer and cut into small pieces. Take boiled potatoes, peel and mash them. Also, take Kaju and cut into small pieces.
Heat oil in a pan. Add jeera to the oil once oil is heated. Now add green chilly, ginger paste, and peas. Saute for about 2 minutes.
Then add coriander powder, paneer, mashed potatoes, kaju, kishmish, salt, lal mirch powder, mango powder, garam masala powder and finely chopped coriander leaves. Mix all ingredients well. Transfer the stuffing into another bowl.
Now for making samosas, take the dough and cut it into small-sized balls.
Take one ball and make a roti using the rolling pin. Divide the roti into two halves.
Take one half and apply some water on the edges with your fingers.
Fold the edges giving it a round shape. Now, fill the stuffing in the cone.
Again apply some water on the edges. Then, stick both the sides nicely. Similarly, prepare all the samosas.
Now, heat the oil in a kadai for frying the samosas. Make sure that the flame is low. As the oil gets heated, place the samosas in the oil and fry them golden brown. Once the samosas are fried, remove them in a plate.
Serve the delicious hot Shahi Paneer samosas with tomato sauce or green coriander spicy chutney and enjoy eating.
